Devil’s food cake (Mrs. Keith)
- 2 cups brown sugar
- 2 well beaten eggs
- 1 cup sour milk
- 1/2 cake chocolate
- 1 cup boiling water
- 3 cups flour
- 1 teaspoon soda
- 1 cup butter and lard (mixed)
Bake in layers. See frosting #7
Irish potato cake
- 1 cup butter
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 teaspoon B.P.
- 1 cup mashed potatoes
- 2 cups sugar
- 1/2 cup milk or cream
- 1/2 teaspoon cloves
- 1 1/2 cup flour
- 1/2 cake chocolate or 3 tablespoon cocoa
- 4 eggs
- 1 cup nuts
Cream butter and sugar. Add warm potatoes (add egg yolks beaten). Add milk alternately with dry ingredients, add nuts (floured). Fold in beaten egg whites.

Danish Orange Cake (Ethna)
- 1/2 cups shortening
- 2 eggs
- 1 cup raisins
- 1 teaspoon soda
- 1 cup sugar
- 2 cups flour
- 3/4 cups buttermilk
- Rind from 1 orange
Cream shortening and sugar. Add well beaten eggs. Grind raisins and orange peel. Sift soda and flour together. Add ground raisins and orange peel. Alternate flour and milk. Pour over cake while hot and still in loaf pan 1 cup sugar and the juice of the orange.
Bake at 350º for 1 hour.
