Salads
Carrot Salad
- 1 cup grated carrots
- 1 cup chopped cabbage
- 1 tablespoon lemon juice
- ½ teaspoon salt
- mayonnaise
- lettuce
Mix ingredients well and serve.
Chicken salad
- cooked chicken
- celery
- French dressing
- mayonnaise
Take equal amounts of cooked chicken cut in cubes and celery. Marinate the chicken with French dressing. Add celery, and just before servicing mix lightly with mayonnaise. Garnish with slices of hard boiled eggs.
Ham salad
- ½ lb boiled ham
- 1 small bottle chili sauce
- 2 stalks celery
- 2 tomatoes
- 2 hard boiled eggs
- 1 green pepper
- 1 tablespoon vinegar
- salt, pepper, and mayonnaise
Mixed chopped ham, cubed celery, and tomatoes and chopped pepper together. Add chili sauce and mayonnaise, salt, pepper, and vineager. Then add chopped eggs, chill thoroughly.
Peach salad with cheese
- 6 sliced peaches
- lettuce
- cream cheese
Make a patty of cheese on lettuce and place the sliced peaches on it. Pour over a little French dressing and serve.
