Here’s a cake icing that will not crack or break off when cut. Mix 1 cup sugar and ¼ cup milk and let come to a rolling boil. Remove from fire, add a few drops of flavoring and beat to constancy to spread.
5 minute chocolate
- 1 tablespoon water
- 1 can Eagle brand magic milk
- 2 squares unsweetened chocolate
Melt chocolate in top of double boiler. Add milk, stir over boiling water 5 minutes until it thickens. Add water, cool. Spread on cold cake.
Pineapple meringue filling
- 4 egg whites
- ½ teaspoon salt
- 3 tablespoons water
- 2 cups sugar
- 1 ½ cup fresh crushed pineapple, drained
Beat egg whites and salt until frothy. Add water gradually and continue beating. Beat until egg whites become slightly firm. Add sugar gradually and beat until the whites will peak and have a polished appearance. Fold pineapple into mixture very carefully. Spread on cake at once.
