Virginia ham loaf
- 1 lb. chopped smoked ham
- 1 cup crumbs
- ¼ cup chopped celery
- 2 tablespoons minced parsley
- 1 tablespoon minced onion
- ½ cup milk
- 1 egg
- 1 spoon paprika
Mix ingredients and press into buttered loaf pan. Bake 40 minutes in moderate oven. Spread with topping.
Topping
- 1 cup B. sugar
- ¼ teaspoon dry mustard
- ⅓ cup crushed pineapple
- ½ teaspoon cinnamon
- 2 tablespoon vinegar
Mix ingredients and spread over the ham loaf. Bake 20 minutes in a moderate oven. Serve warm or cold.
Sausage loaf
- 1 ½ lb. sausage
- ¾ cup Pet™ milk
- 1 tablespoon corn meal
- ¼ cup water
Shape in loaf. Bake 15 minutes, then add 1 can of tomato soup and ¼ cup of water and bake 1 hour longer in oven (350ºF). Baste often.
Kiby (Mrs. Ganties)
- 2 lb. ground steak
- 1 large onion
- 2 cups crushed wheat
- salt and pepper and cinnamon to taste
Put wheat in water and let soak 30 minutes.
Mix the meat with the chopped onion. Add salt, pepper, and cinnamon to taste, then add the wheat, after squeezing all the water out. Mix well. Put through food chopper. Make in cake and fry in deep shortening.
