Waffles and hot cakes
Plain waffles (mostly used)
- 2 cups flour
- 2 eggs
- 2 cups milk
- 3 teaspoons B.P.
- ½ teaspoon salt
- 4 tablespoons melted butter
Sift flour, salt, and B.P. into mixing bowl. Beat yolks well and add milk and beat, adding this to the flower slowly beating until perfectly smooth. Then add melted butter and fold in whites, stiffly beaten.
Sour milk waffles
- 2 cups flour
- ¾ teaspoons soda
- 1 teaspoon B.P.
- 1 ½ cups sour milk
- 4 tablespoons melted butter
- 2 eggs
Sift flour, salt, soda, and B.P. Combine egg yolks, melted butter and sour milk. Stir the liquid into the dry ingredients until smooth. Fold in stiffly beaten whites of eggs. Bake on hot iron.
Standard waffles
- 2 cups flour
- 2 cups milk
- 1 teaspoon salt
- 3 teaspoons B.P.
- 2 eggs (beaten separately)
- 4 tablespoons melted butter
(For pecan waffles add the following: ½ cup finely chopped pecan and 1 tablespoon sugar.)
Sift flour, B.P., and salt into mixing bowl. Beat yolks well, add milk and beat. Add this to flour slowly and beat until perfectly smooth. Then add melted butter and fold in the stiffly heated whites of eggs. The same amount of sour milk may be used with ¾ level teaspoon soda and 1 teaspoon of B.P.
