Spicy apple pie
- 8 large tart apples
- ¾ cup sugar
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- dash salt
- 1 tablespoon butter
- pastry
Peel apples and slice thinly. Combine with sugar, spices, and salt. Turn into (9 inch) pastry lined pie pan. Dot with butter, cover with top crust and seal edges. Bake in hot oven (400ºF) until apples are tender, about 35 or 40 minutes.
Orange chiffon pie
- 1 ½ tablespoons gelatin
- 1 cup cold water
- ½ cup sugar
- 1 cup orange juice
- 2 egg whites
- 2 tablespoons lemon juice
- 1 cup whipped cream
- orange sections
- baked pastry shell
Soften gelatin in ¼ cup of the water. Boil the remaining water and sugar. Add gelatin and dissolve. Cool. Add orange and lemon juice and chill. When it begins to thicken, whip until light. Fold in stiffly beaten egg whites, then whipped cream. Turn into pastry shell and chill. Serve decorated with orange sections.
