Banana cream pie
- ¼ cup sugar
- 1 ¼ tablespoon cornstarch
- ⅛ teaspoon salt
- 2 eggs beaten
- 2 cups scalded milk
- 3 bananas
- ½ teaspoon vanilla
- whipped cream
- 1 baked pastry shell
Blend sugar, cornstarch, and salt. Stir in eggs, then scalded milk. Cook in double boiler, stirring constantly until thick and smooth. Remove from heat, add vanilla and cool. Slice bananas into baked pastry shell and cover with cream filling topped with whipped cream before serving.
Peach cream pie
- ¾ cup evaporated milk
- ¾ cup water
- 2 tablespoons flour
- 1 tablespoon cornstarch
- ⅓ cup sugar
- ⅛ teaspoon salt
- 2 eggs beaten
- 1 teaspoon vanilla
- 1 #2 can sliced peaches, drained
- Baked pastry shell
- Meringue
Scald milk and water in top of double boiler. Combine flour, cornstarch, sugar, and salt and add to milk, stirring until thick, about 10 minutes. Stir in eggs and cook 1 minute longer. Add vanilla and cool.
Turn into pastry shell and arrange peaches over filling. Decorate with meringue.
