Pies
Pecan pie
- 3 eggs
- 1 cup chopped pecans
- ½ cup sugar
- ¼ cup butter
- ¾ cup dark corn syrup
- juice ½ lemon
Cream butter with sugar. Add eggs and syrup and lemon juice. Beat with egg beater. Add pecans. Bake 10 minutes at 425ºF unbaked shell in hot oven (350ºF) 30 min.
Butter scotch pie
- 2 cup B. sugar
- 1 tablespoon butter
- 2 cups sweet milk
- 3 tablespoons flour
- Pinch salt
- 2 egg yolks
- 2 teaspoons vanilla
- 1 cup hot water
Mix flour, sugar and salt together. Then add 1 cup milk and 1 up hot water. Cook in a double boiler until real thick. Cover with meringue and brown.
Pineapple pie
- 1 cup sugar
- ½ cup flour
- 2 eggs
- 1 tablespoon butter
- 2 cups crushed pineapple
Mix 2 cups crushed pineapple with 1 cup sugar and ½ cup flour thickening and add 2 well beaten egg yolks. Cook stirring all the time in a double boiler until thick. Add 1 tablespoon butter. Pour into baked pie shells. Cover with meringue and bake brown.
Chocolate pie
- 3 cups milk
- ⅓ cup corn starch
- 5 egg yolks
- 1 cup sugar
- 1 teaspoon vanilla
- 5 tablespoon cocoa
Top
- 3 egg whites
- 3 tablespoons sugar
- ½ teaspoon B.P.
