Appetizers
Fruit cocktail
- 1 grapefruit
- 1/2 cup strawberries or cherries
- 2 oranges
- 2 slices canned pineapple
- 1/2 cup sugar
Remove pulp from grapefruit and oranges, cut strawberries in half. Cut pineapple in small pieces. Sweeten pineapple juice with sugar and put two tablespoons of this juice over fruit which has been arranged in sherbet glasses.
Shrimp cocktail
- 1 cup cooked, fresh shrimp
- 2 cups pineapple tidbits (pineapple cut in cubes)
- lemon juice
- mayonnaise
If shrimp are large cut them in halves. Sprinkle with lemon juice and chill thoroughly. Drain and chill pineapple. Combine with shrimp and mix with well seasoned mayonnaise to which a little horseradish has been added. Serve in sherbet or cocktail glasses.
Cocktail sauce
- 1 teaspoon salt
- 1/4 teaspoon chopped parsley
- 1 teaspoon chopped chives
- 1 teaspoon melted butter
- 2 tablespoons vinegar
- 1/4 teaspoon tabasco sauce
- 1 teaspoon Worcestershire sauce
- 1 teaspoon horseradish
- 1/2 cup catsup
- 1/4 cup finely cut celery
Mix well together and chill thoroughly.
